Easy sweet potato side dish
I love gardening and trying to grow new kinds of plants. My in-laws are lovely people who let me grow things in their garden now that we live nearer to them, and not everything is possible to grow (, or fit) on a balcony.
This year I decided to try to grow sweet potatoes for the first time in my life. This project started already at the beginning of the year by immersing a store-bought sweet potato into water to start growing some slips. A few weeks ago, I then inserted the longest slips into their own glass of water to grow roots. Today I transplanted those in the ground.
I won't be knowing before the end of the summer if this experiment was a success or failure, but this recipe will be the first one I'll be cooking if I end up getting some harvest.
Roasted Sweet potatoes
Sweet potato/potatoes (1 is enough for to as a side dish)
Olive oil
Salt and Pepper from a mill
Instructions:
Preheat the oven to 200°C (circulating air).
Wash the sweet potato well and cut it into approx. 1 cm thick slices without peeling.
Place the slices on top of an oven tray covered in baking paper.
Drizzle olive oil on top and add salt and pepper.
Bake for 20-25 minutes.
Easy and delicious!
